Tofu Schnitzel with Raclette

Yesterday was Swiss National Day, so we decided to make a Swiss inspired meal for dinner…with our own experimental flare, of course. So, we decided to make a vegetarian Schnitzel! We opted to use firm Tofu because it is best suited to hold up to this cooking method without crumbling. So, we picked up a pack of firm tofu, grabbed some raclette, and we got to work! A few slices, coatings, fryings, and a light broiling later, and we had this really tasty and funky meal!

We served our schnitzel atop Zucchini Rösti. But we think this would also go really well with a classic potato Rösti alongside some steamed veggies!
