Greek Stir Fry

We made this dish for dinner a few months ago, and it was really tasty and different…but we procrastinated on posting the recipe because we just couldn’t figure out exactly what to name it. This name is the best we’re going to come up with, so it’s time to share the entree with the world.

At its heart, it’s like a stir fry, but with very different flavours and ingredients…chief among which is the inclusion of cheese! We also relied on balsamic vinegar instead of a more traditional soy sauce based motif. Lastly, we served our stir fry over couscous instead of rice.

We think you’ll enjoy this (if you like the ingredients), and it’s a fun, easy dish to make with a little whimsy and a ton of vegetables.
