Lobster Roll Tartines

We were looking for a special birthday dinner to make for our son’s big day, and this was what we came up with! We had some frozen Lobster Tails that we bought on crazy sale, and we stashed them away for a special occasion…so when his birthday came around on the calendar, it seemed perfect to defrost and use them!

From there, we decided to make Tartines with some classic Lobster flavours (brown butter, chives, and lemon). The end result was a crunchy, buttery, lobstery flavour and texture in each bite, and these turned into an instant hit. Although, they were later surpassed by my wife’s homemade lemon cake.

We served our Lobster Tartines with Kaleslaw. However, we think they would also go nicely with a steamed veggie medley (perhaps broccoli, cauliflower, and carrots), Garlic Snow Peas, a more classic tangy Coleslaw, or a side salad.
