Duck Wing Street Tacos with Blueberry Corn Salad

To be completely honest, this idea came about after we asked ourselves, “What do we have in the fridge/freezer that needs to be eaten?” The first two ingredients we selected were blueberries and feta (the most perishable items), and from there, we looked at items that have been sitting in our freezer for a little while. That’s where the corn and the duck wings came into play. Add in the fact that we cooked this on a Tuesday, and tacos became the winning choice. I was on “meat duty,” while my wife created the topping.

As a side note/addendum to the meat choice, duck wings don’t have a ton of meat on them. The wings from one duck made 4 street tacos. Add in that duck wings just aren’t findable at grocery stores like chicken wings are, and you’ve got a dilemma! We suggest a few different ways to solve this intractable problem (in no particular order):
