Taco Meatloaf with Spiced Sour Cream

For this dinner, we decided to build taco flavours into the homestyle classic comfort food, Meatloaf. I’m happy to report that it was a big hit, and I have the green light to make it again in the future! When we make this again, I may play around with different sauces to change things up a bit…so if you don’t like sour cream, try this with a freshly made pico de gallo, a salsa verde, or our Avocado Margarita Sauce.

We served this with Roasted Asparagus, but it would also be fantastic with a sauteed medley of red peppers, poblano peppers, corn, and black beans.

Time: 45-60 Minutes (depending on the size of your meatloaf)
