Here’s another dish inspired by my wife’s and my Alta Via 1 trek in the Dolomites over the summer! When we checked into each rifugio, we were given a menu with a few options for a first course (typically pasta) and a second course (typically meat). Each one had its own unique options, but the Chili Garlic Noodles that were offered as a first course at Rifugio Tissi immediately piqued our interest! We had gone a good number of days without any spicy dishes, so we both opted for these noodles. They did not disappoint! They were a fairly simple spaghetti tossed in olive oil along with chili flakes and garlic! And, they were amazing!
So, when we got home, we decided to recreate them using squid ink spaghetti we also brought home! We then grated some fresh Parmesan Reggiano over our noodles to complete the side dish!
We served our spaghetti as a side dish to go along with our Giant Puffball Parm! But, we think it would also go really well with seafood like a Sauteed Shrimp or Calamari dish…or even tossed with some crumbled Italian Sausage!
Time: 20 Minutes
Ingredients:
- Spaghetti. We used Squid Ink Spaghetti
- Olive Oil
- Minced Garlic (or fresh garlic)
- Red Pepper Flakes
- Salt
- Dried Oregano
Method:
- Bring a pot of water to a boil along with some olive oil and salt.
- Add your pasta, and boil until soft.
- As your pasta cooks, combine your olive oil, garlic, red pepper flakes, salt, and dried oregano together in a large pan.
- When your pasta is nearly ready, heat your pan and all its seasonings.
- When your pasta is ready, drain the water, and turn the heat off in your seasonings pan.
- Pour your pasta into the pan, and toss to combine with all the seasonings.
- Plate, grate your cheese atop, devour, and enjoy!
