Double Garlic Pork Loin

On cold winter days where the snow (or sleet) is falling, sometimes, you just need a hearty comfort food. This meal fits the bill! at its core, it’s a Dutch Oven roasted pork loin with a lot of garlickiness. As it cooks, the aromas waft through the house and make you very hungry before it’s time to eat (which is the only drawback, as far as I’m concerned). Anyway, the pork comes out super tender, and the roasted garlic gravy drizzled atop adds some moisture and flavour depth back to the dish as well!

We served our pork with a Root Vegetable Mash, a broccoli casserole that my great aunt made, and Fried Goat Cheese Balls! However, this would also go very well served atop a bed of Roasted Garlic Mashed Potatoes or Sneaky Mashed Potatoes alongside steamed or roasted vegetables.
