Buffalo Jackfruit Flatbread

We made this vegetarian version of a Buffalo Chicken Pizza yesterday. Little did we know, it turned out to be a lucky pizza! It came out of the oven when our football team was losing 17-3. Then, when we cut and plated, the score ballooned to 20-3. As we began to eat, the Bills began their comeback, and with this pizza sitting in our bellies, they eeked out a last minute win 23-20! I’m not here to claim that the pizza was responsible for the win, even though it indisputably was. What I am here to do though is to share our recipe for this non-chicken flatbread with you!

We picked jackfruit for two main reasons. The first was that my sous chef and I went to a Korean market on Saturday, and he saw some Jackfruits (they are ginormous) and was immediately intrigued. He asked if we could get one, and I said, “not this time,” because I didn’t want to buy one not knowing whether he liked it or not. Then, on Sunday…knowing that we were traveling to my Dad’s house to watch the game and would need a quick assembly meal, we figured that a pack of prepared jackfruit would be quicker than chicken, so we bought it!

We figured swapping the chicken for jackfruit was low risk since we’ve cooked with the ingredient before, and it takes on the flavour of your sauce. Luckily, we were right with that assertion, and the Buffalo Sauce paired very nicely with the jackfruit. Crispy deliciousness was had by all…victory!
