“Funky Duck” Patty Melt

Cooked this one with my top sous chef again! This time, the meal was his idea, and what he came up with was pretty impressive for both its creativity, ambition, and pretty extreme adventurousness. The key ingredients that he wanted to cook with were duck giblets! So we took the gizzards and livers, diced them up, and formed them into a burger patty, and we used that to make patty melts!

We then turned our attention to the hearts, which we sliced and fried to serve over arugula as a side salad. This meal is truly a perk of buying a Whole Duck…not only do you get all the fun Duck Recipes with the “normal cuts,” but you also get some more unique ones!
