We love to make deluxe Nachos as a quick meal to enjoy with sports events. A little while back, we made Buffalo Chicken Nachos, and we wanted to try to remake those in a vegetarian format! To make it happen, we decided to swap out the chicken for beans…and because cannellini beans are fairly mild flavoured, we chose to use them since they wouldn’t compete with the Buffalo sauce!
In the end, these ones came out more like a single layer of Kenneth’s Nacho Tower but with some added funkiness from the buffalo sauce, celery, and crumbled blue cheese. A perfect meal for a Bills game (or a Sabres playoff game, if you’re into such things).
Time: 30 Minutes
Ingredients:
- Tortilla Chips
- 1 Can of White Beans (Cannellini or Great Northern)
- Buffalo Sauce
- Celery
- Jalapenos
- Onion
- Crumbled Blue Cheese
- Shredded Monterrey Jack (or other mild) Cheese
Method:
- Dice your onions and celery, and slice your jalapenos into rounds.
- Heat some oil (we used avocado oil) in a pan, and sauté your veggies.
- As your veggies cook, open your beans, and drain the excess liquid. Mash the beans by hand, with a masher, or in a food processor.
- Combine your beans and buffalo sauce in a bowl, and fold together to fully incorporate.
- Arrange your tortilla chips on your plate.
- Scoop and spread your beans atop your tortilla chips.
- Top your beans with your sauteed veggies.
- Sprinkle your crumbled blue cheese across your nachos, and finish everything off with your shredded cheese.
- Microwave for 60-90 seconds until everything is hot, and your cheese is melted.
- Devour, and enjoy!
