My son sent me a picture of a dinner he ordered while on a school trip the other day. He ordered an olive pizza, and to his dismay, it only had 3 olives on it! So, I decided to feature olives in a meal when he got home…and this was the result! The tart turned out firm but flaky on the bottom and filled with herbed olives, caramelized onions, and feta cheese on top to add the classic olive flavours with some sweet, salty, and earthy notes! And, the best part was that the kid wasn’t disappointed with the number of olives in this dinner.
We served these as a side dish to go alongside a simple pan roasted chicken breast. But you can also serve them as a main alongside a salad…or you can even cut the puff pastry into smaller pieces to serve as a bite sized hors d’ouevre!
Time: 50 Minutes
Ingredients:
- Puff Pastry
- Black Olives
- Onion
- Ground Rosemary
- Ground Thyme
- Feta Cheese
Method:
- Thaw your puff pastry dough
- Preheat your oven to 375 degrees F, and place some nonstick foil on a baking sheet.
- Peel and dice your onion. Then, melt some butter in a pan, and add your onions. Cook over low heat, stirring occasionally until your onions caramelize.
- As your onions cook, open your can of black olives, drain the liquid, and put the olives in your food processor. Chop finely, and then transfer to a small mixing bowl.
- Sprinkle your rosemary and thyme into your chopped olives. Then, when your onions are ready, add them in along with your feta, and stir to combine.
- Unroll your puff pastry dough, cut it into the size squares you like, and place those on your baking sheet.
- Top each with your olive/onion/feta mixture almost all the way to the edge.
- Bake for 30-35 minutes until the edges begin to rise and turn a crispy golden brown.
- Plate, devour, and enjoy!
