When we make pizzas, we typically don’t go with ones you’d find on a typical pizza parlor menu. This one, while fitting into the “funky pizza” category is based on a more traditional type of pizza. Meatball pizza has a special place in my heart because of a memory with my dad. He took me up to Rochester, NY to go to Buffalo Bills training camp (GO BILLS) every summer for a number of years. Those were awesome trips…we’d go visit my grandparents before heading to Rochester, which made the trips all the better!
On one such trip, we arrived late to our hotel, so we ordered a pizza from a local pizza shop. We ordered a meatball pizza with mushrooms and olives. And then, about 20 minutes after placing the order, we got a call back from the shop asking for clarification on our order. They transcribed it as “large meatball with mushrooms and olives,” and when they began to make it, they couldn’t figure out whether we wanted a large meatball or a large meatball pizza. We clarified, they cooked, and we ate…and it was awesome. I still remember it like it was yesterday.
Fast forward, and my son and I had some leftover Goat Meatballs in the fridge…and it felt like they were destined for a pizza recreation! Since our meatballs were made from ground goat, we decided to add some chevre to the party as well. Even if you make this with regular meatballs, we highly suggest the additional goat cheese atop!
Time: 60 Minutes (if not making the meatballs ahead of time)
Ingredients:
- Pizza Crust or Dough (Homemade or Store Bought)
- Goat Meatballs (or your favourite beef or turkey meatballs)
- Mushrooms
- Sliced Black Olives
- Tomato Sauce
- Shredded Mozzarella
- Chevre
Method:
- Preheat your oven to 425 degrees F.
- Slice and sautee your mushrooms.
- Arrange your pizza crust on your pizza stone or a baking sheet.
- Spread your tomato sauce evenly atop your crust.
- Sprinkle your shredded mozzarella atop your sauce.
- Arrange your black olives and mushrooms over your mozzarella.
- Slice your meatballs, and place them across your pizza.
- Cut your goat cheese into chunks, and place them atop your pie to finish off your topping array.
- Bake for 25-30 minutes until your cheese is all melted, and your crust reaches your desired level of crispness.
- Plate, devour, and enjoy!
