Garlic BBQ Spaghetti Squash Egg Rolls

We have fallen a little behind in posting over the past few weeks! Hence the time difference between our Honey Miso Jackfruit Egg Rolls and these ones (as clearly, the egg roll wrappers would have not stayed good for the entire duration). Anyway, for this side dish, we roasted our spaghetti squash and then shredded it, mixed it with sauce, seasoning, garlic, and peas. From there, we spread it on our egg roll wrappers, rolled them up, and baked.

Of course, we had a lot of spaghetti squash left over after we made our egg rolls…so we quickly sautéed that with some sliced chicken, peas, and BBQ sauce as our entree. In all, the egg rolls though were the star of the dish, and I’ve been given the green light by my family to make them again.

Time: 90 Minutes (shorter if you cook your squash ahead of time)
