As you’ve probably seen from all of the beet recipes on the website, we love beets and are always looking for new ways to work them onto our plates. This idea came from someone I work with who is also a beet enthusiast. I would have never thought of this on my own, so I’d like to extend a huge thanks to her for opening my eyes to this! These beets take on a bit of a smokiness from the grill that gives them a rich and different flavour profile than any beets we’d had to date.
We served these as an entree with a Rhubarb Risotto and steamed green beans. However, they would also go well atop a salad with some balsamic vinaigrette or as a side dish for grilled pork or chicken.
Time: 20 Minutes
Ingredients:
- Beets
- Olive Oil
- Seasonings (we didn’t use any because we wanted pure beets, but salt and pepper would be great)
Method:
- Place your beets in the microwave on a microwave safe plate, and cook them 2 or so minutes at a time until they become a little softer to the touch.
- When the beets are tender to the touch, set them aside and preheat your grill.
- When the beets cool just enough to touch, put on some PVC kitchen or surgical gloves, and peel the beets with a potato peeler and then cut them into thick slices.
- Place the slices flat on your cutting board, and give them an olive oil spray or brushing, and apply your desired seasonings.
- To the grill! Place the beets on the grill for about 4 minutes. Then, flip them, and let them go for another 4 minutes.
- Plate, devour, and enjoy!
