Among one of the many reasons we love cooking with cast iron is its versatility. You can use it on the stovetop, you can use it in the oven, and you can even use both methods for the same meal! Such is the case with our Cast Iron Casseroles, or Casteroles as we like to call them.
For this one, we diced some Sweet Potatoes as our carb component, and we added onions garlic, spinach, and diced chicken! Once everything was properly cooked, we topped it with some freshly grated Irish Sheep Cheddar, and let everything finish off in the oven. In the end, this was a really easy dish with nothing but simple wholesome ingredients…and it tasted great! We hope you enjoy as much as we did!

Ingredients:
- Chicken Breast
- Sweet Potato
- Spinach
- Onion
- Garlic
- Sea Salt (we used smoked sea salt)
- Sheep Cheese. We used Irish sheep cheese, but Manchego or Cheddar would work well too.
- Black Pepper
Method:
- Dice your sweet potato.
- Heat a little butter in a large cast iron dish, and add your sweet potato to get it started cooking (it takes the longest of all the ingredients). Stir occasionally.
- As your sweet potatoes cook, peel and dice your onion and garlic. Add to your pan, and stir to combine.
- Heat your oven to 350 degrees F.
- Chop your spinach, and set aside.
- Dice your chicken breast.
- When your potatoes begin to soften, add it to your pan. Stir in your chicken, and allow it to brown.
- Once your chicken has browned, add your spinach, and allow to wilt.
- Grate your cheese, and spread it evenly atop your ingredients.
- Transfer your pan to the oven, and bake for 10-15 minutes.
- Plate, devour, and enjoy!
