Ramp Saag Paneer

While it tends to look unappetizing at times, we absolutely love Saag Paneer. We typically use a variety of greens to make our versions, e.g. mustard greens, kale, spinach, etc. For this one, we decided to go a little wild (ha…foraging pun) and use Ramps exclusively! So, we started by cooking all of our sauce veggies together with spices before pureeing them in a blender. The ramps gave our sauce a little bit of a sweetness and garlickiness, which made gave a really fun added dimension to our overall dish! We then combined that withour paneer, and we were good to go.

We served our Saag Paneer over a bed of cumin seed infused basmati rice. If you’re looking for some additional sides, we suggest trying Spinach and Garlic Naan or Baked Vegetable Samosas!
