Buffalo Blue Cheese Pulled Chicken Sandwich

On Saturday night (or as I like to call it, “Football Eve”), I was camping and cooking Smoked Pork, Apple, and Sauerkraut Sandwiches, I found myself fretting about a good Game Day Lunch for Sunday. I figured that I had some Sauerkraut, so I (in a moment I’m not terribly proud of) asked my wife to pick up a pack of hot dogs from the store if she had time. Her response was akin to, “Don’t worry about it. I got this.”

Knowing that anything she was planning would beat hot dogs by a country mile, I said I was intrigued and formally withdrew my hotdog request. Boy, am I glad I did…because the idea she came up with and the sandwich she made was one of the best I’ve ever had! Not only did she make this sandwich…she also made Coleslaw on the side!

AND, to top it all off, this meal was better than good luck! It willed the Bills to a glorious fish squishing to the tune of a 35-0 shutout! I think I may need to cede football food to her…especially since one of my most recent game day meals got Buffalo eliminated from the 2020 AFC Championship Game (yes, I take full responsibility).
