Garlic Crusted Catfish

The other day, we wanted a quick dinner, but we had nothing defrosted and ready to go (poor planning on our part), so we made a little trip to our grocery store. There, we saw two catfish fillets sitting on the ice in front of the fishmonger just begging to be selected. So, we picked them and brought them home. When it comes to catfish, we prefer farm raised for a couple of reasons. The primary one is that it tastes better (not muddy) than wild, and a close second is that Catfish is extremely sustainably farmed (Thank you Alton Brown and Good Eats for that tip).

With our catfish in hand, we decided to pull upon an old friend, Garlic to do the bulk of our flavouring, and we finished it off with a buttery breading crumble to build a little extra flavour and texture!
