BBQ Salmon

This is a combination I would have never thought to try on my own. On one of my dad’s and my many pilgrimages up to visit my uncle en route to a Buffalo Bills game, we arrived to an incredible aroma. After we brought our Bills gear (lucky hats and shirts…and tissues) inside and settled in, my uncle pulled a cast iron pan of BBQ Salmon out of his oven, and it was time to eat. We definitely devoured and enjoyed that night (even if the ensuing Sunday was less enjoyable). Today, after a quick bike ride down to New Hope Seafood Market, we found ourselves in the possession of a pound of incredibly fresh Scottish Salmon, and it was time to attempt a recreation.

We served this with steamed green beans and Mashed Celery Root. However, thinking back to that original meal, I guarantee you that Lisa’s Grilled Potatoes are a perfect pairing as well.
