I love Salmon, but I’m the only one in my house who does…so I make it when I’m on m own for dinner. Then, I leave the kitchen fan on so the house doesn’t smell fishy to the point where I get in trouble…although, sometimes, I still find myself in hot water for the aromatics. For this meal, it was worth the trouble!
I started by searing the salmon in cast iron to keep it soft inside but crispy on the top, which gave a really nice texture dichotomy. From there, I made a glaze from mandarin oranges and honey before topping the salmon with black and toasted sesame seeds. The glaze adhered really well, and the orange flavour and overall sweetness of the glaze went exceedingly well with the salmon.
We served our salmon over couscous and alongside steamed broccoli. However, it would also be great with Wasabi Mashed Potatoes and Roasted Asparagus if you prefer!
Time: 30 Minutes
Ingredients:
- Salmon Fillet
- 2 Mandarin Oranges
- 2 Teaspoons Honey
- Sesame Seeds
Method:
- Cut your oranges in half, and juice them. Pour into a saucepan, and combine with your honey. Begin to heat on low, and stir occasionally.
- Add a little oil to a cast iron pan, and begin to heat.
- Pat your salmon dry on all sides with a couple of paper towels. This will encourage a great sear and discourage any sticking to your pan.
- Add your salmon flesh side down to the hot pan, and sear for 4-5 minutes until your salmon turns a crispy pinkish brown on the flesh side, and then flip.
- Sear the skin until your fish reaches an internal cooked temperature of 145 degrees F.
- Remove your salmon from the pan, and plate. Drizzle your honey orange glaze over your fish, and spinkle your sesame seeds atop!
- Devour, and enjoy!
