As fans of a particular team from Buffalo, NY (GO BILLS!), we have a particular affinity for Wings. However, they can be a little tricky to make because they’re easy to overcook. Well, that is easily remedied with the Sous Vide method, which allows us to cook the wings to an exact internal temperature, which generates a perfectly tender wing! Of course, cooking via sous vide doesn’t produce crispy skin…but a quick hit under the broiler can fix that!
Once our wings were fully cooked, tender, and crispy, we tossed them in a little Dinosaur BBQ Sauce (roasted garlic variety) to finish them off! We highly recommend Dino BBQ if you have access to the sauce…but if not, swap it out with your favourite bbq sauce, and you’re good to go! We served our wings with a field greens side salad.
Time: 6 Hours (most of which is sous vide cooking time)
Ingredients:
- Chicken Wings
- Salt
- BBQ Sauce of your choice
Method:
- Fill a large pot with water for sous vide cooking, and heat it to 150 degrees F.
- Cut your wings into drums and flats, and remove the end tips.
- Sprinkle salt on your wings, and transfer them to zip top bags.
- Zip your bags mostly closed, and then dip in your hot water bath to use displacement to remove the rest of the air. Then, fully zip your bags shut.
- Sous vide for 5 hours.
- Remove your wings from the sous vide and the plastic bags, and pat them dry.
- Arrange some foil on a broil safe pan, and place your wings atop.
- Broil for 5-10 minutes until the skins get crispy.
- Place your wings in a large mixing bowl, pour your BBQ sauce over them, and toss to combine.
- Plate, devour, and enjoy!
