We made this for lunch a few weeks ago because we were in the mood for a fun and refreshing summer salad! We started with a bed of arugula, which provided a bit of pepperiness to our salad. We then added strawberries for sweetness, crumbled blue cheese for creaminess, and candied nuts for a little crunch. For dressing, we opted to use a blackberry walnut vinaigrette to add a little tanginess.
As with anything though, this salad is totally customizable! We think that crumbled goat cheese could also play well on this, and crispy onions could stand in for the nuts (especially for anyone with nut allergies). For the dressing, we think you could go with a champagne or balsamic vinaigrette and be very happy with your choice! Regardless of what you pick, this salad is sure to refresh and delight!
Time: 10 Minutes
Ingredients:
- Arugula
- Strawberries
- Vinaigrette of your choice. We used a Blackberry Walnut, but Raspberry or Balsamic would be fantastic as well)
- Crumbled Blue Cheese or Crumbled Goat Cheese
- Candied Pecans or Walnuts
Method:
- Arrange a copious handful of arugula in a salad bowl.
- Drizzle your vinaigrette atop. You can either leave it there, or toss the arugula to coat evenly.
- Sprinkle your blue cheese (or crumbled goat cheese) on your dressed greenery.
- Cut the tops off your strawberries, and slice the remaining berries into cross-sections. Then, arrange them atop your bed of arugula.
- Add your candied nuts to between your rows of strawberries.
- Plate, devour, and enjoy!
