Foil Wrapped French Onion Pork

After my sous chef and I got home from a camping trip over the weekend, I got the urge to make something that I used to make on camp-outs when I was growing up since it was quick, easy, could be prepared ahead of time, and required little to no cleanup. For this meal, you can customize your veggie choice, and you can even pick between grilling (what we did), throwing your foil pack in hot coals of a campfire, or even roasting it in the oven. Endless possibilities!

We decided that since we already had the grill going, we’d just make our entire dinner on the grates, so we paired our pork with Grilled Romaine Hearts and Grill Bread…however, if you really want to jump right into the deep end of the swimming pool with foil wrap cooking, a Grilled Veggie Pillow is always a solid choice!

Time: 30 Minutes

Ingredients:

  • Boneless Pork Loin Chops
  • French Onion Soup Powder
  • Veggies of your choice. We tend to favor carrots, red onion, and celery for this.

Method:

  • Heat your grill to somewhere between low and medium. (This also works if you want to stash your foil wrapped package on hot coals of a campfire).
  • Slice all of your vegetables, and set them aside.
  • Butterfly your pork loin chops by holding them upright on your cutting board, slicing down the center, and folding them open so they double in surface area and lay flat.
  • Place each piece of pork on a sheet of foil that is large enough to fully wrap around it and seal shut when the time is right.
  • Sprinkle your soup mix powder atop your pork, and then layer on your veggies of choice.
  • Wrap everything tightly, and when all of your foil packs are prepped, transfer them to the grill.
  • Grill for about 20 minutes. During this time, all of the moisture will steam your ingredients, and it will liquify your soup mix to turn it into somewhat of a marinade/braising liquid.
  • At the end of the cook time, jab a digital meat thermometer into your pork to ensure that it reaches 165 degrees F (it should since you’ll be using pressure and wet heat).
  • Remove from the grill, and let sit inside for a few minutes. Then, carefully open your foil.
  • Transfer your pork and veggies to your plate, and pour any remaining liquid left in the foil over everything.
  • Devour, and enjoy!
