Shiitake Ginger Spring Rolls

We saw spring roll wrappers in the store the other day, and we bought them on a whim. That is of course to say that there are several forthcoming spring roll recipes…but we decided to start off building Asian flavours since that’s generally the part of the world where these tasty little treats come from. We stuffed these ones with a mixture of shiitake mushrooms, cabbage, and scallions that we sauteed with some soy sauce and rice vinegar.

We served our spring rolls as a side for Cauliflower Fried Rice (using orange cauliflower), but they would go very nicely with most Stir Fries…or even with Egg Drop, Hot and Sour, or even Lemongrass Shrimp Soups!

Time: 40 Minutes

Ingredients:

  • Shiitake Mushrooms
  • Cabbage. Napa is best, but we used green because it looked fresher in the store.
  • Scallion Onions
  • Fresh Ginger
  • Soy Sauce
  • Rice Vinegar
  • Spring or Egg Roll Wrappers

Method:

  • Place an oven safe pan with some water in it in the bottom rack of your oven, and then preheat your oven to 400 degrees F. Spread some foil over a baking sheet, and give it a good oil spray to prevent future sticking.
  • Slice your cabbage and onions into very small strips.
  • Heat some oil in a pan, and add your cabbage and onion. Sautee until they begin to soften. As this begins to cook, use a microplane grater to grate in a bunch of fresh ginger to really infuse the flavour into your filling.
  • As your cabbage cooks, clean and slice your mushrooms. Then, when your cabbage has softened a bit and barely begun to brown, add in your mushrooms, and sautee.
  • Add in a little soy sauce and a quick splash of rice vinegar, and coo until all liquid has evaporated, and transfer your cabbagey mushroomy goodness into a bowl.
  • Lay your spring roll/egg roll wrappers on a clean surface, and then place your filling atop.
  • Wet a finger (preferably yours), and run it around the edges of your spring roll wrappers, and then fold everything up into nice little envelopes. The water around the edges of the wrappers will help them hold together.
  • Place all of your spring rolls onto your foily/oily baking sheet, and then give the tops another good oil spray.
  • Place in the oven for about 20 minutes, or until they become golden brown and crispy.
  • Plate, devour, and enjoy!
