Duck Wing Street Tacos with Blueberry Corn Salad

To be completely honest, this idea came about after we asked ourselves, “What do we have in the fridge/freezer that needs to be eaten?” The first two ingredients we selected were blueberries and feta (the most perishable items), and from there, we looked at items that have been sitting in our freezer for a little while. That’s where the corn and the duck wings came into play. Add in the fact that we cooked this on a Tuesday, and tacos became the winning choice. I was on “meat duty,” while my wife created the topping.

As a side note/addendum to the meat choice, duck wings don’t have a ton of meat on them. The wings from one duck made 4 street tacos. Add in that duck wings just aren’t findable at grocery stores like chicken wings are, and you’ve got a dilemma! We suggest a few different ways to solve this intractable problem (in no particular order):

  • Buy Whole Duck, and learn How to Break Down a Whole Duck yourself. Freeze the wings, and once you have enough wings, you’re good to go. That will also give you an opportunity to experiment with other Duck Recipes! This, however will take the longest amount of time between now and the day you’re ready to cook tacos.
  • Use a different cut of duck! Braised duck legs will work well for this too, and there is more meat per leg. You can also use duck breast if you so desire (although that’s such a good cut of meat, we suggest using it for Other Purposes).
  • Change up your protein to chicken wings or pork.

Time: 4 Hours (most of which is letting the duck wings cook in a crockpot)

Ingredients:

  • Duck Wings (You can also use other easier to find duck meat…or chicken wings)
  • Corn
  • Blueberries
  • Feta Cheese
  • Red Pepper
  • Lemon Juice
  • Tortillas
  • Salt and Pepper

Method:

  • Prep your meat first. Cut excess fat off (carefully…it’s tricky) your wings, and then place them in a slow cooker (we used a mini-one), sprinkle with salt and pepper, cover, and cook on low for about 4 hours.
  • As your meat nears the end of its cook time, wash and combine your blueberries, corn, feta, diced red pepper, and a few squirts of lemon juice in a large bowl.
  • Carefully, remove your wings from the crockpot, and use a fork to pull and shred the meat.
  • Heat your tortillas.
  • Assemble, plate, devour, and enjoy!
