Thai Peanutty Ground Pork Stir Fry

We used half of our pack of ground pork to make Taco Meatloaf, and we wanted to create something completely different with the rest of the meat. Most of our past stir fries used sliced meat, and we found the incorporation of ground meat to be fantastic. It really blended in with the other ingredients well, and the ground meat took on the flavours of the sauce incredibly. We will definitely be using ground meat more in stir fries moving forward. As for the rest of the flavours, we really want to build around peanuts, and the combination of the coconut milk and the peanut butter made for a complex, tasty sauce that was the perfect texture to coat the stir fry ingredients!

Time: 30 Minutes

Ingredients:

  • Ground Meat of your Choosing. We used Pork, but Beef or Chicken…or even Fried Tofu would be good too.
  • Broccoli
  • Onion
  • Red Pepper
  • Peanuts
  • Peanut Oil
  • White Rice (We used leftovers from a takeout meal the other day)
  • For the Sauce:
    • 1/2 Can of Coconut Milk (or more if you really want it saucy)
    • A few tablespoons of Smooth Peanut Butter
    • A splash of fish sauce or soy sauce
    • Sriracha

Method:

  • Cook your rice according to the directions on your bag or box (if not using leftover takeout white rice).
  • Wash your vegetables. Slice your onion, slice your red pepper, and cut your broccoli into chunks.
  • Heat some peanut oil in a large pan, and add your onions. Allow to sautee for a few moments.
  • Add your ground meat, and sautee with your onions.
  • Add your broccoli and peppers, and allow everything to cook together for a few minutes, stirring intermittently.
  • Pour in your coconut milk, and bring to a simmer.
  • Scoop and add your peanut butter, fish/soy sauce, and Sriracha (to taste according to your desired spice level).
  • Stir and sautee until your meat is cooked and your broccoli has softened.
  • Then, add in your peanuts and rice, stir to combine, and bring back to a simmer for a few minutes.
  • Plate, devour, and enjoy!
