Taco Meatloaf with Spiced Sour Cream

For this dinner, we decided to build taco flavours into the homestyle classic comfort food, Meatloaf. I’m happy to report that it was a big hit, and I have the green light to make it again in the future! When we make this again, I may play around with different sauces to change things up a bit…so if you don’t like sour cream, try this with a freshly made pico de gallo, a salsa verde, or our Avocado Margarita Sauce.

We served this with Roasted Asparagus, but it would also be fantastic with a sauteed medley of red peppers, poblano peppers, corn, and black beans.

Time: 45-60 Minutes (depending on the size of your meatloaf)

Ingredients:

  • For the Meatloaf:
    • Ground Meat of your choice. We used pork, but beef and chicken would work too. We made mini-meatloaves, so we only used 1/2 lb of meat, but if you’re making a traditional sized loaf, use a full pound.
    • 1 egg for every 1/2 pound of Pork
    • Corn
    • Ground Cumin
    • Chipotle Chili Powder (or Cayenne Powder)
    • Salt
    • Optional: Taco Cheese
  • For the Sour Cream:
    • Sour Cream
    • Lime Juice
    • Chili Powder
    • Optional: Avocado

Method:

  • Preheat your oven to 350 degrees F, and spray your meatloaf vessel with oil.
  • In a large bowl, mix your ground meat, seasonings, corn, and egg together.
  • Scoop and transfer your mixture to your greased meatloaf vessel(s).
  • Bake for 30-45 minutes (time will depend on the amount of meat you use and the size and shape of your vessel) until your meat reaches a minimum internal cooked temperature of 165 degrees F. If using cheese, add it atop your meatloaf about halfway through your cooking time.
  • As your meatloaf gets close to that 165 degrees F internal temperature, combine your sauce ingredients in a bowl, and stir together. If using the avocado, mash it first, and then mix with your other ingredients.
  • When your meat is done, remove from the oven, let cool for a minute or two on the counter, and transfer to plates. If using small loaf pans, plate, the entire meatloaf. If using a large loaf pan, slice your meatloaf, and transfer slices.
  • Add your sauce on top.
  • Devour, and enjoy!
