Sauteed Cucumbers

After our neighbors gave us a heaping bag of fresh cucumbers they had grown in their garden, we were on a mission to use them in very different ways until they were gone. For Part 1 of our mission, we made Chilled Cucumber Soup to build upon the raw cucumber goodness, so for Part 2, we decided to try our hand at cooking the cucumber. We’d never tried doing this before, so we were a little nervous and wanted to keep it simple so we could isolate the flavours of the cooked cucumber to get more ideas for Part 3 (coming soon). In the end cooking the cucumber brought out a wonderful mix of sweet and tart notes that we will definitely want to build upon in the future. It’s definitely different, but it’s also absolutely worth the try!

We served this as a side for our Indian Mutton Gyros, but they would go well with any grilled meat…especially if you’re building upon Greek flavours or featuring yogurt as a part of your dish.

Time: 15 Minutes

Ingredients:

  • Cucumber
  • Salt
  • Pepper
  • Butter

Method:

  • Peel and thinly slice your cucumber.
  • Melt some butter in a frying pan.
  • When the pan and butter are hot, add in your cucumber and a little salt. Sautee until it begins to brown. Near the end, add in your black pepper, and stir to combine.
  • Plate, devour, and enjoy!
